Jam Cookie Recipe
This is a great recipe to make some lovely jam cookies. Try making them with your children and have some fun together.
Ingredients for cookie dough
200g butter, diced
150g caster sugar
1 egg yolk
2tsp vanilla essence
300g plain flour
½ tsp salt
Ingredients for filling
Jam - strawberry works well but try other flavours too
25g softened butter
65g icing sugar
1 - 2 tsp warm water
Take the butter out the fridge to soften slightly and cut the butter into chunks.
Beat the butter till soft and then add the caster sugar and mix them together until they are a creamy consistency
Add the vanilla essence and egg yolk and mix together well
Then sieve the flour into the mixture and mix together until a dough starts to form
It may seem too dry at this point but gently bring the dough together with your hands until you have a ball of smooth dough
Wrap the cookie dough in cling film and put it in the fridge for half an hour to chill
Once the dough is chilled roll it out to 1/2cm thick
Use an approx 6cm cutter to cut out your cookie circles. Then on half the dough circles use a small approx 2cm cutter, of any shape, heart, star etc. to cut a hole in the centre of the cookie
Put the cookies on a greased baking tray and put them in the oven for 10 to 12 minutes on 180°C until golden
Wait for the cookies to cool completely
Once cool it’s time to put them together to make the jam cookies
Using the ingredients for the filling, beat the butter till it’s light and smooth
Sieve the icing sugar into the butter and mix together well
Add a little warm water to help the mixture bind together, but you want it quite firm
You now have your buttercream icing
Lay out the cookies that are whole, these are the bases
Now spread the buttercream over the cookie bases
Blob some strawberry jam, or whatever flavour you are using on top of the buttercream
Put the cookies with the cut outs on top of the jam
You now have your jam cookies, ready to eat and enjoy.
