Jam tart recipe
Ingredients:
175g plain flour
90g cold butter - cut into pieces
2 tbsp cold water
Jam - whatever choice of flavour or flavours you want
To make the pastry
Sift the flour into a bowl
Add the butter into the flour
Rub the butter into the flour until it looks like fine breadcrumbs
Add the water and mix to form a dough
If you have time the dough will benefit from being put in the fridge wrapped in clingfilm for 15mins.
Put the oven on at 200C to pre heat while you make the tarts
Roll out the dough till its about 0.5cm thick and then use round cutters to cut out the dough
Place them in a tin
Add some jam - depending on the size of your cutters, enough to comfortably cover the base of pastry, probably somewhere between 1 to 2 teaspoons each
Bake in the oven for about 15-20 mins until the pastry has gone golden and crispy, and the jam is bubbling
Let the tarts cool a bit and then put onto a wire rack and allow to cool
Wait for them to cool properly before being tempted to try them as the jam gets really hot
