Chocolate Plum Cake Recipe

A lovely recipe for an Autumn cake, particularly if you have a glut of plums, as this recipe uses quite a few. Enjoy a slice as regular cake, or alternatively as the mixture is quite moist it's also great served warm with custard or ice cream as a pudding.

Ingredients

175g Butter
500g Plums
145g Light Muscovado Sugar
30g Caster Sugar
175g Self Raising Flour
3 Eggs
1 tsp Baking Powder
1 tsp Cinnamon
3 tbsp Cocoa Powder

Prepare a 8” round cake tin, by greasing and flouring.

Halve and de stone the plums, keep 8 halves, and roughly chop the rest.

In a bowl, put the butter (chopped), both sugars, flour, baking powder, cocoa powder, cinnamon and eggs.

Mix together, I prefer to do this with a hand held electric whisk, when it will be done in a few minutes. Alternatively you could mix by hand, until all combined.

Fold in the plums, until all incorporated. It makes quite a stiff mixture.

Spoon into the baking tin, and gently level off.

Push the halved plums reserved earlier, into the top of the cake mixture, skin side up.

Put in the oven on 160C for 1 hour, depending on the juiciness of the plums! The juice in the plums can vary the length of cooking time needed. Use a skewer to test, if it comes out clean its cooked.

Let it cool, and then eat and enjoy.

Serve warm as a pudding, with ice cream/custard, or cold as a regular slice of cake.
